Whenever I went on a “diet” in the past, I was always focused on the end result. I would say things like, “when this diet is over….” or, “when I finally lose this weight and can eat normal again…” or, “I can’t wait until I don’t have to count calories or points again!” I know that you fellow “dieters” can relate to this. Well, something pretty amazing happened about 6 months into this way of life. All of a sudden I noticed that I didn’t even WANT to go back to the way that I ate before. I’m not real sure when or why this became my mindset but after talking to several other people who have made the switch, I have found that they had the same revelation! This tells me that if YOU make the commitment, this will happen for you as well. There was a common link between all of us who experienced this switch. All of us went a minimum of 8 or so months of STRICT keto! I really want this point to sink in and be reinforced in most of my posts….if you only half-heartily try to live a keto life, you won’t be successful. The beginning sets the tone for your success. Why? Although I don’t have all of the answers, I know that when you first enter into ketosis, you will feel better than you thought possible. The clarity, the energy, the lack of hunger and a strong desire to do what it takes to continue to feel like this. Use this as motivation! During the times when you used to snack and munch mindlessly, create NEW habits! Give yourself a facial or a mani/pedi. Take a bubble bath or go for a walk. Search Pinterest for recipes and snacks that you love! Join Keto FB groups with like-minded people so you have a tribe to lean on and offer help to!

Here is a YUMMY fall recipe to help you on your journey!
No Bake Pumpkin Cheesecake!
1-1/2 Cup Walnuts or Pecans
1 TBS Sweetener of choice (splenda, monkfruit, stevia)
1/2 Tsp Cinnamon
8 oz Cream Cheese softened
1 C Whipping Cream
1/2 Tsp Vanilla
1/2 Tsp Cinnamon
1/2 Cup Splenda or Lanko or other sugar sub
1 Tsp Pumpkin Pie Spice
3/4 Cup Pumpkin Puree
Add nuts, cinnamon, TBS of the sweetner to a food processor and grind until moistened. Press into your dish of choice. In your blender, blend cream cheese, pumpkin, sugar substitute until smooth. Add vanilla, spice and cinnamon until well combined. Add heavy cream and blend for about 5 minutes until light and fluffy. Spoon into your dish or ramekins. Refrigerate until ready to eat! YUM!
